The following organizations have information and programs for non-military service work. 

Internships

You can find an excellent list of international service organizations and the jobs and internships available through them at the Service Learning site.

Idealist.org has an extensive listing of internships with social change groups.

Inroads specializes in internships for youth-of-color. An extensive list of feminist internships is available through the Fund for a Feminist Majority. The Directory of Internships in Youth Development site lists "lists over 2,000 paid and unpaid internships in more than 500 nonprofit human service organizations nationwide."
